Gather the winkles in a bucket, if they are from a super sandy area it is worth purging them for several hours in water to help flush out the sand. I like to purge them anyway, just in case.
While the Winkles are flushing themselves clean, gather your wild garlic. If you have gathered your garlic and it is wilting, place the leaves and bulbs into a glass of water, they will quickly re-hydrate themselves and stop looking so pathetic.
Place a large knob of butter into a saucepan and melt
Once melted drop in your garlic and mix until the garlic softens.
Add coconut milk or White wine to the butter and garlic and bring to the boil
Drop in the Winkles and boil for 3-4 minutes
With a pin, hook out your winkles and enjoy, don’t forget to watch out for the winkles door, a round, brownish hard bit at the entrance to the shell.
